Weekend Cookbook Challenge #1 - A Submission from Alicat's Mom - Cola Cake
2 c. sifted flour
1 1/2 t. baking soda
1 t. salt
1 1/3 c. sugar
2 egg yolks (keep whites for frosting)
1/2 c. cocoa
1/2 c. shortening
2/3 c. buttermilk (or sour milk)
2/3 c. Cola
Start with all ingredients at room temperature. Preheat oven at 350f.
Sift together the flour, baking soda, salt, sugar and cocoa. Add the shortening, milk and cola.
Beat approx. 1 1/2 minutes at low speed until well blended. Add the egg plus the egg yolks. Beat another 1 1/2 minutes at low speed.
Pour into 2 well greased 8 inch square or round pans. Bake for 30-35 minutes or until done. Wait until cooled to frost.
2 egg whites
3/4 c. granulated sugar
1/3 c. cola
1/4 t. salt
1/4 t. cream of tartar
1/3 c. light corn syrup
Combine all ingredients. Cook over rapidly boiling water in a double broiler, beating constantly at a low speed until peaks form (this takes a while!).
Remove from heat and continue beating until thick enough to spread (we never were able to reach the 'stiff peaks'). Frost cola cake once the cake has cooled.
