Toasted Pecan & Walnut 5 Minute Fudge

I'm gonna say this upfront: While this is a super simple recipe for fudge, if you attempt to make this with low quality chocolate, it's gonna taste like crap. Sorry, I just have to be upfront.

Toasted Pecan & Walnut 5 Minute Fudge

12 oz. semi sweet chocolate (2 cups) (I might try making half semi sweet, half milk chocolate next time)
2/3 c. sweetened condensed milk (7 oz. can)
1 tablespoon water
3/4 c. chopped pecan & walnuts, mixed. Toasted if desired.
1 tsp. vanilla

Line a cookie sheet with waxed paper or tin foil. Set aside. In a medium microwave safe bowl, combine chocolate pieces, sweetened condensed milk, and the water.

Cook uncovered, on 100% power for 1 minute. Stir. Cook about 1 minute more, or until chocolate is melted and mixture is smooth, stirring every 30 seconds. Stir in nuts and vanilla. Pour mixture onto prepared cookie sheet and spread into a rectangle shape with a spatula that has been sprayed lightly with cooking spray. I smooshed the mixture into one corner of the pan to give at least 2 of the 4 sides a straight line.

Chill fudge about 20 - 30 minutes or until firm. Cut fudge into 1 1/2-inch square pieces. Makes 24 squares.

To store: Keep in an airtight container at room temperature for up to 1 week.

*To toast nuts, spread them in a shallow pan and bake in a 350f degree oven for 5 to 10 minutes.
