Egg Nog Pancakes
On the heels of Adam's Buttermilk Pancakes comes my variety of Eggnog Buttermilk's.
If I do these again I would completely take out the buttermilk and use 1 cup of eggnog instead. :)
Makes 8 small pancakes
1 cup AP flour
1 tsp. baking soda
1/2 tsp. salt
1 large egg, lightly beaten
1 cup buttermilk (For Eggnog Pancakes, exchange 1 cup eggnog)
Heat a low/medium pan with several tablespoons of vegetable oil. Use an ice cream scoop to make small, approx. 3 inch wide pancakes. Cook until browned.
I did have some troubles getting the pancakes to cook through completely, so I would advise you to cook this at a low heat, basically just hot enough to get the oil going. Overall a very nice and puffy pancake!
