Cherry, Walnut & Citrus Cookies

1/2 c. butter
1/4 c. sugar
1 egg yolk
1 slightly beaten egg white
1 tsp. finely shredded lemon peel
1 tsp. lemon juice
1 c. AP flour
1 T. finely shredded orange peel
2/3 c. finely chopped walnuts
9 whole candied red cherries, halved
Dash of salt

1. Beat butter for 30 seconds on high. Add sugar and beat until combined. Beat in egg yolk and lemon juice. Stir in flour, orange peel, dash of salt, and lemon peel. Cover and chill for one hour. (This step is important as it is practically impossible to form dough before chilling)

2. Preheat at 325f. Shape dough into 1" balls. Dip balls in egg whites and roll in nuts. Place on a greased cookie sheet. Press a cherry half into each ball. Bake for 20 minutes or until lightly browned.

To Store: Layer cookies separating with wax paper in an airtight container. Store at room temp for up to 3 days for freeze for up to 3 months. Recipe from: Better Homes - Christmas Cookies 2002
